On Monday I got a delivery from bringmehome.au and I was blown away by all the types of fruit and vegetables I was gifted in the Variety Box (swipe to the last pic to see how full the shelf in my fridge was) 🤩
All the produce was in perfect condition and there was so much in there I think it’ll last me at least 2 weeks! 🔥
I found it so handy having fresh fruit in the fridge, ready to eat for when I feel like a snack 🍏🍊bringmehome.au also want to reduce waste as much as possible so all the fresh produce came sitting inside a cardboard box with a single piece of paper covering the top! ☺️
I thought I should make a recipe using some produce from the box, so I made a Mexican inspired TVP & rice bowl 🍚 Recipe below! 🤍

250g Mexican flavoured TVP
1/4 red onion, diced
1/4 capsicum, diced
2 garlic cloves, minced
100g cherry tomatoes, halved
1/2 cup canned corn
1/2 cup canned black beans
50g tomato paste
1/2 avocado (for topping)
Rice (to serve)
1️⃣. Prepare TVP as per packet instructions. Preheat a large fry pan on medium-high heat with 1 tbsp olive oil. Add onion and capsicum and fry until onion is softened.
2️⃣. Add garlic to pan and fry for a few minutes. Lower the heat to med-low and add TVP, black beans, corn, and tomato paste and stir well. After a few minutes, add cherry tomatoes and cook for about 5 minutes or until softened (you may need to add a dash of water if TVP starts sticking to pan).
3️⃣. Once all ingredients are combined and fragrant, turn off heat. Serve with rice and avocado 🥑
